Grapes are hand harvested and undergo fermentation in stainless steel tanks for two weeks at a temperature of 57 - 59 F. 15% of the blend undergoes malolactic fermentation before the wine is matured for four months. The wine is filtered and fined before ageing one year in bottle prior to release.
